Cracker Barrel Hashbrown Casserole

  • 5 cups frozen hash browns, not thawed
  • 1 cup onions, finely chopped
  • ¼ cup light butter or Smart Balance Light, melted
  • ½ cup fat-free sour cream
  • ½ of a 10.5 oz can Campbell’s Healthy Choice cream of chicken soup
  • Lawry’s seasoning salt and black pepper, to taste
  • 1 cup light cheddar cheese, shredded
  • 2 tablespoons green onions, sliced (green parts only), optional topping


1. preheat oven to 350 degrees. Coat a 9 x 9-inch casserole dish with cooking spray.

2. In a large bowl, mix all ingredients together except cheese and green onions. Spread out in casserole dish. Sprinkle cheese evenly over top. Cover with foil and bake for 30 minutes. Remove foil and continue to bake for 30 minutes until golden brown.

3. Garnish with green onions if desired.

Makes 12 side servings or 6 main-course servings.
