Do you procrasti-bake sometimes too? The weather was wet and chilly here over the weekend and while I had a to-do list as long as my arm and a suitcase to pack, these cookies were calling my name.. bake mee.. bake meee.And who was I to resist!?With Anzac Day just around the corner, filling the house with sweet cookie aromas sounded much more enticing than anything else, so the cookies won.
Ingredients:
- 1 1/2 cups rolled oats
- 1/2 cup desiccated coconut
- 1/2 cup almond meal
- 4 Tablespoons of butter
- 3 Tablespoons of honey or maple syrup
- 1 Tablespoon of vanilla extract
- 1 tablespoon water
Directions:
Preheat oven to 150 degrees
Combine oats, coconut and almond meal in a food processor
Add the butter, honey and vanilla
Whiz to combine
Add water and process again
Roll into balls and place on a lined baking tray
Flatten each slightly with your fingers
Bake for 20-30 mins until golden
That’s it! Too easy.
