Peanut Butter Chocolate Chip Bundt Cake

Ingredients:

  • 1 pkg. yellow or white cake mix (I used yellow)
  • 1 cup milk
  • 1/2 cup creamy peanut butter
  • 1 tsp. vanilla
  • 3 eggs
  • 1 cup of chocolate chips
  • 1/2 cup mini chocolate chips

Directions:

Preheat oven to 350F.  Grease and flour a 12-cup Bundt pan, or use PAM spray for baking.

Beat everything but the chocolate chips together for 2 minutes at medium speed.  Fold in the chocolate chips.

Pour into pan and make sure batter is even. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.

Cool in pan for 10 minutes then invert onto a wire rack and cool completely.

Glaze with chocolate or peanut butter glaze, or a glaze of your choice. Decorate with mini chocolate chips or chopped peanuts or whatever you want!

Peanut Butter Glaze

  • 1/4 cup creamy peanut butter
  • 1/2 tsp. vanilla
  • 1 cup powdered sugar
  • 1/2 cup milk, more or less, to make desired consistency

Whisk all ingredients together.

Chocolate Glaze

  • 2 TB butter
  • 2 TB unsweetened cocoa powder
  • 1/4 cup heavy cream
  • 1 cup powdered sugar
  • 1 tsp. vanilla

Melt butter in a small saucepan over low heat.  Add the cocoa powder and cream and stir until it thickens, about 2 minutes.  Do not boil.  Remove the pan from heat and whisk in the vanilla and powdered sugar until smooth.
