Maple Glazed Chicken

Ingredients

  • 1/4 cup maple syrup
  • 4 Teaspoons lemon juice (apple vinegar can also be used)
  • 1 Tablespoon margarine or butter
  • Salt and pepper to taste
  • 4 pieces boneless chicken breast, chicken legs can also be used

Instructions

Preheat the oven to 230 Celsius (450 Fahrenheit)
Pour the maple syrup, lemon juice and margarine in a small saucepan and simmer for five minutes. Gently stir to avoid burning.
Lightly oil a baking pan and place the boneless chicken breasts on it. Make sure they are not touching.
Shake the salt and pepper on the boneless chicken breasts. Add as much as you like.
Place the chicken breasts in the oven and bake them for 10 minutes.
After 10 minutes remove the chicken breasts from the oven and pour the maple glaze on top. Make sure the maple glaze gets on both sides of the chicken.
Put the glazed chicken breasts back in the oven and bake for another 15 minutes. Before taking them out cut into the thickest piece and make sure the juice is clear. If its bloody leave the glazed chicken in the oven for a few more minutes.
While the maple syrup used in the glaze is high in sugar, baking the chicken breasts is one of the healthiest ways to prepare chicken. Using this maple glazed chicken recipe once or twice a month will provide a sweet change of pace from the typical dinner idea without worrying about your health. Using margarine instead of butter will also make this recipe healthier. By only using two pans it is very easy to clean up after you are done.
