Buffalo Chicken Grilled Cheese

Today we have the final installment of Recipe Remix, and don’t worry I have already started planning for round 2! I hope that you have enjoyed all of the recipes this week and the sharing of the baby shower. This particular dish was my favorite of the three. I love grilled cheese like really love it. I could eat it for lunch every single day, oh only if calories were invisible.

One of the main reasons I convinced Blair to move to the town we live in now is because we have this restaurant called The Pop Shop less than a mile from our house. You see, they are famous for their extensive grilled cheese menu. They were even featured on Throwdown with Bobby Flay for a grilled cheese throwdown. Makes sense that I decided to plant myself and my husband so close to it. It is totally a kid-friendly establishment and we happily go sans kids. We eat our delicious grilled cheeses and then of course eat hot fudge sundaes, it is glorious. I love trying to recreate their grilled cheeses at home. This one is not on their menu, but I may just have to convince them to add it.

So what happens when you combine buffalo chicken with my favorite sandwich, you get pure awesomeness. But really, what isn’t better than spicy buffalo chicken mixed with ooey, gooey cheddar cheese on slightly buttered toasted bread. Yep, nothing. This comes together in a pinch and the result is fabulous. I suggest making sure that your cheese is at room temperature since that will allow the cheese to melt to that perfect stage of oozing. I didn’t do that so mine is not as oozing as I would have liked, so make sure you don’t make my mistake. Good bread is also essential too! Buffalo Chicken Grilled Cheese

Ingredients:

  • 1/2 cup cheddar cheese grated or slices, room temperature
  • Crockpot buffalo chicken
  • 2 slices bread (I used sourdough)
  • 1 tablespoon butter, room temperature

Directions:

Butter the outside of each slice of bread, sprinkle half of the cheeses on the inside of one slice of bread, top with the buffalo chicken, the remaining cheese and finally the other slice of bread. Heat a non-stick pan over medium heat. Add the sandwich and grill until golden brown and the cheese has melted, about 2-4 minutes per side.
