Instructions
Place the eggs in a saucepan and cover them with cold water.
Bring the water to a boil and then immediately remove the pan from the heat.
Cover the saucepan and let the eggs stand in hot water for 10 to 12 minutes.
Remove the eggs from the hot water, allow them to cool, and then peel and chop them.
Put the chopped eggs in a bowl and add the mayonnaise, green onion, and mustard. Mix everything together.
Season the mixture with paprika, salt, and pepper to taste.
Stir everything together until it's evenly mixed.
Serve the egg salad on your favorite bread or crackers.
